My wife and I first visited this oasis of tranquility way back in 2008 for just one night to celebrate our 25th Wedding anniversary, and we had the most enjoyable meal we’d ever had in Spain till then. However, the charm of the old mill stayed in our minds and when it came to celebrate our 40th wedding anniversary in 2023, we decided to return for a longer stay. Arriving by train in Sigüenza, we looked for a taxi but in Sigüenza in August, they’re like hen’s teeth :-) (Ie non existent ) So, chancing our luck we phoned the Hotel and they graciously sent a car to pick us up (first good point), on arrival we were very warmly greeted by Inés (Head of Reception) who congratulated us on our anniversary (evidently when booking, I’d mentioned we were coming to celebrate our 40th) and on arrival in the room, there was a bottle of champagne and a large jar of their honey together with a welcome card wishing us a happy Anniversary and a pleasant stay. Staff The first thing to be mentioned was that all the staff had very pleasant attitude with smiles being the default, I can’t emphasise enough just how pleasantI the staff were as I think this makes or breaks a stay in a hotel, personally I think they all took their lead from Inés who was always around to help with any issues. Food The food in the Bistro (the cheaper option) was at the same level as the Restaurant with the tasting menu being Michelin star worthy Environment The grounds were really extensive with plenty of space where one could enjoy the peace and quiet of the countryside. The Room It was quite quaint as was to be expected of a mill conversion, very comfortable however. The Verdict I can’t sing the praise of this very pleasant haven of tranquility enough All in all a very, very enjoyable stay, literally everything was just perfect Oh and of course, needless to say, on departure they ferried us back to Sigüenza Would we return? You bet we will.
